Granola 1 (Like Muesli cereal)
7 cups organic rolled oats
1 cup organic oat flour ( you can use whole wheat or spelt too)
1 cup finely ground walnuts (I use a food processor)
1/2 cup non GMO soy protein powder ( I have a brand I trust)
1/2 - 1 cup pure maple syrup or honey
1/2 cup organic grapeseed oil (you can use any you like but not something with a strong flavor)
Mix all dry ingredients together in a big bowl or pot. Make a well in the middle of the dry ingredients and add the wet. Mix dry into wet using your hands or a big spoon. Mix so all the dry ingredients are coated and there are no clumps. Spread on a cake pan or cookie sheet with sides. The granola will dry better if it is spread out a bit thin. Place pan into a 350 degree oven for 10 minutes. Remove the pan and stir the outsides into the center. Place pan back into the over for another 5 - 10 minutes until the granola is just starting to lightly brown. Be careful not to let it burn. Remove from the oven and allow to cool in the pan. Store in an airtight cooler and eat with milk, plain, and/or with fresh or dried fruit.
Granola 2
8 cups organic rolled oats
1 - 2 cups chopped nuts (walnuts, pecans, or almonda)
1/2 cup sunflower seeds ( not roasted)
1/2 cups sesame seeds (optional)
3 cups of any whole grain organic flour (you can combine flours)
1/2 - 1 cup honey
1 - 2 cups hot water
1 teas. vanilla extract
Mix together dry ingredients in a large bowl. Mix in the honey and hot water a bit at a time. This mixture tends to get pastey so I mix in a little at a time and stir so the clumps aren't so big. Spread the mixture onto a lightly oiled baking sheet with edges. Don't put too much on the sheet at a time, keep it a bit thin and spread out because the clumps have to bake through. Also, break it up into small clumps. This goes into a 350 degree oven, stirring every 5 - 10 minutes until everything is golden brown. Take is out and let it cool in the pan. Store in an airtight container. You can play with the spices and liquids. Like you could use warmed apple juice and cinnamon. Let me know what you come up with:)
